A versatile vegetable, the “mighty and meaty eggplant” known as baingan in India, is savored in all regions of the country. Chef Billo will take you on a culinary tour throughout India which will highlight the eggplant. She’ll create dishes like - Baingan Bhurta from North India, Aloo Baingan from East India, Bhagare Baingan from the famous city of Hyderabad, Baingan Bhaja from Kolkata and last but not the least, Vangi Bath a rice and eggplant dish from South India.
