Mangos bring out the best of South Florida’s talented chefs, and Fairchild has been host to many of the finest, from Chef Allen Susser, Michelle Bernstein, Cindy Hutson, Robbin Hass, Doug Rodriguez and Dewey LoSasso, to name a few. This year we are delighted to welcome the following chefs to our Mango Brunch on Sunday, July 13.
Chef Sean Bernal, OCEANAIRE Sean Bernal, a native of Puerto Rico, attended Johnson & Wales University. His creative Latin-Asian style cuisine has been enjoyed at Baleen, Tambo and Pescado in Coral Gables, and his use of fresh local tropical fruits and "ultra-fresh” fish is a perfect fit at Oceanaire.
Chef Philippe Ruiz, PALME D’OR, The Biltmore Philippe Ruiz, a native Frenchman, joined the Biltmore in July 1999, as Chef de Cuisine of its signature restaurant, Palme d’Or, where he has received the highest accolades for his ingenious interpretation of French nouvelle cuisine. The Miami Herald has twice rated Palme d’Or as “exceptional” and describes Ruiz’s fare as “sublime-distinctive, creative in its unique way of being classic and modern all at once.”
Chef John Suley, JOLEY John Suley originally wanted to be a lawyer, but instead graduated from the Culinary Institute of America. He has worked with Chef Roy Yamaguchi and Chef Daniel Boulud, and was nominated in 2007 by the James Beard Foundation as a Rising Star Chef.
Chef Allen Susser, CHEF ALLEN Allen Susser is a founding member of the original “Mango Gang” as well as an award-winning chef and owner of Chef Allen’s. An expert in the use of tropical fruits, especially mangos, he is also the author of several cookbooks, including The Great Mango Book.
Chef Sean Brasel, TOUCH Colorado native Chef Brasel was Executive Chef at Cliff Young’s, a 5-star restaurant in Denver, before moving to South Beach to open Touch. His cuisine is described as a “modern influenced grill,” relying on simple techniques to showcase the freshness of ingredients.
